Here’s a very simple way to make soft cheese at home. You won’t need rennet or any special ingredients. If you have trouble finding fresh local milk, try your local natural foods store, or ask your grocer if they know any dairy farms nearby.
1 quart fresh, local whole milk
1 cup active-culture buttermilk
2 tsp lemon juice or white vinegar, more if needed
3/4 tsp salt, or to taste
